Thai Chili Hot Honey Smoked Pulled Pork Recipe


Ingredients:

  • 1 pork butt (approximately 6-8 pounds)

  • 10 tablespoons Flavor Buds Thai Chili Hot Honey

  • 2 tablespoons salt

  • 2 tablespoons paprika

  • 1 tablespoon ground black pepper

Instructions:

Step 1: Prepare the Pork Butt

  1. Trim and Honey Rub: Start by trimming any excess fat from the pork butt. Then, rub 10 tablespoons of Thai Chili Hot Honey all over the pork, ensuring it’s evenly coated to create a sticky base layer.

  2. Seasoning: In a small bowl, combine the salt, paprika, and black pepper. Evenly sprinkle the seasoning mixture over the honey-coated pork butt, pressing gently to help the seasoning adhere to the honey.

Step 2: Smoke the Pork Butt

  1. Preheat Smoker: Preheat your smoker to 250°F (121°C). Once it’s ready, place the prepared pork butt directly on the smoker grates, fat side up.

  2. First Smoking Phase (Unwrapped): Smoke the pork butt for 6 hours without wrapping. The honey will caramelize, forming a flavorful bark on the outside. Spritz the pork with a mixture of water and apple cider vinegar every hour to keep it moist.

  3. Wrap the Pork: After 6 hours, remove the pork butt from the smoker and wrap it tightly in butcher paper or aluminum foil. Wrapping helps retain moisture while continuing the cooking process.

  4. Second Smoking Phase (Wrapped): Return the wrapped pork butt to the smoker and continue cooking for another 6 hours, or until the internal temperature reaches 203°F (95°C). This slow cooking method ensures the pork becomes tender and easy to pull apart.

Step 3: Rest and Shred the Pork

  1. Rest: Once the pork butt reaches 203°F, remove it from the smoker and let it rest, still wrapped, for at least 30 minutes. This allows the juices to redistribute, keeping the pork moist and flavorful.

  2. Shred: After resting, unwrap the pork and use two forks to shred the meat. Discard any large pieces of fat.

Step 4: Serve

  1. Serve the Thai Chili Hot Honey Pulled Pork on sandwiches, tacos, or as a main dish with your favorite sides. The smoky, tender pork with its sweet and spicy glaze will be the highlight of any meal.
